I was diagnosed with Hashimotos way back in 2002. At that time, my TSH was 55! I was 6 months postpartum and was just hoping that it was temporary thyroiditis. But that was not the case. I have been taking some sort of thyroid replacement hormone ever since. At the time, my doctor recommended eating a Paleo diet and no dairy.
I made some dietary changes and my TSH came down to 5, but I still had symptoms and that is what started the road to thyroid replacement hormone.
Fast forward to now. I went for a check up with my doctor, the same one I saw 14 years ago when the initial diagnosis was made. He talked to me about some food allergy tests and how a good bit of his patients were having these tests run to find out that they are allergic to a certain food. Once they eliminated that food, their symptoms disappeared and some never even started hormone therapy. He warned me that I might always have to take medication because my diagnosis was so long ago, but eliminating a food that my body was having trouble with might reduce symptoms and the risk of further autoimmune disorders. So we ordered the tests.
I received results yesterday. To my surprise, the test shows eggs as a big allergen! Also dairy, wheat and gluten, various nuts, and soybeans!
We live on a farm! What two things are here in abundance? Milk, eggs, and wheat! I guess on a good note, I can eat vegetables and meat, two additional items here on the farm.
How am I supposed to go about eliminating these foods from my diet? Will they only have to be eliminated temporarily until my gut heals? What caused this? Was it the virus that I had a month ago that I can’t seem to shake? All these questions remain to be answered.
I spent some time last night and this morning looking for alternatives to some of my favorite foods: creamer for coffee, bread, breakfast foods. I have found two web sites that I am printing out recipes from:
